November Regional Menu: Lazio E Umbria

A new month brings a new regional menu. We bid farewell to the region of Tuscany and move to the rustic and traditional cuisine of the Lazio E Umbria region.

Umbrian cuisine is simple in nature, originating from its Etruscan roots. The cuisine is dependent on fresh, seasonal ingredients that is found growing in the nutrient-dense soil, raised on local farms and discovered in the forests flourishing in the region.

This rustic cuisine, inspired by traditional dishes, is created with minimal ingredients, relying heavily on locally sourced produce from grains, vegetables, fresh herbs and Umbrian liquid gold: olive oil.

The Lazio hills are fertile, providing optimum conditions to grow all sorts of vegetables, which are then tossed in olive oil, herbs, garlic, and a generous serving of anchovies. The meat dishes are typically strong in flavour, with chicken and rabbit being the common game of choice.

November’s Regional Menu at Bar Alto has been crafted around traditional Lazio E Umbria cuisine, taking into consideration the amount of meats included in dishes such as trota in porchetta – panfried rainbow trout with traditional porchetta spices, faro and fennel – while combined with the rich flavours of agnolotti di fava – fresh broad bean and pecorino ravioli, truffled porcini sauce.
