What’s at the Centre of an Italian New Years Table?

Most cultures holiday traditions bring about a certain symbolism and festivity. With New Years almost always encouraging luck and prosperity in the year to come and of course, a hearty protein at the centre of the table; a grand roast embodied with a strengthening abundance.

Porchetta is an Italian specialty, often sold by street vendors outside shopping plazas, at festivals and in the marketplace. This feast of a roast is an important part of local cuisine in the Lazio Region. Family and friends gather to wrap their teeth around the pork shoulder flavoured and stuffed with herbs, garlic and seasoning and cooked as a whole pig until the skin is golden.
